Mom's Italian Style Meatloaf

Here's another recipe for my Taste Book.  My mom has been making this meatloaf ever since I can remember eating with a fork.  It is so delicious I'll bet even people that don't much care for meatloaf will enjoy it.  Three ingredients make this meatloaf "Italian Style":  oregano, basil and mozzarella cheese (which is killer).  My mother didn't always add spinach (it's listed as optional for that reason) but it's a fantastic addition and a good way to incorporate a healthy vegetable without anyone (even kids) noticing.  Cook until it's browned on top and bubbling.  You will notice a lot of "juice" around the edges of the loaf pan and that's fine- it keeps it moist.  Easy to put together, you could make this on a weeknight and not feel terribly hassled.  

Mom's Italian Style Meatloaf

2 pounds ground beef
3/4 cup Italian Style bread crumbs
1/2 cup onion, chopped
1/4 cup ketchup
2 eggs
1 tablespoon worcestershire sauce
1/2 teaspoon salt
1 teaspoon dried oregano
1 teaspoon basil
1/4 teaspoon freshly ground pepper
1/4 pound mozzarella cheese cut into 1/4 inch cubes
3 squares mozzarella cheese, cut in half diagonally
**optional:  chopped fresh spinach can be added to meat mixture before baking

Combine all ingredients except the cheese and mix well. Add the cubed cheese and mix well. Place in loaf pan (8¼“ x 4½” x 2¾"). Push any cubes of cheese that are showing down into the loaf and smooth off the top. Bake at 350 for about an hour or until done. Remove from oven; overlap the slices of cheese down the center of the loaf. Return to the oven for 2 minutes or so to soften the cheese.
