Italian/Pasta
There are a few Italian ingredients I always have in my pantry/refrigerator/freezer: PANCETTA - I keep it frozen and cut off what I need as I need it PASTA - the shapes vary but the brand is always Barilla OLIVE OIL - both regular and extra virgin PARMIGIANO REGGIANO CHEESE - I buy a block of the good stuff- no matter the price- and grate it fresh for each meal PIAVE VECCHIO - I discovered this delicious cheese about a year ago at a local cheese shop. I was looking for Romano which the store was out of and they recommended this as a substitute. It was out of this world. Since purchasing it there, I have seen it occasionally in large supermarkets but it's hard to find (usually tucked away). GARLIC - I am never without at least one bulb CANNED TOMATOES - always San Marzano Tomatoes CAPERS - they last forever in the fridge and add a lot of flavor to lean meats without a lot of bulk or calories. My favorite pork chops call for a good amount of capers. They are always good to have in the pantry. PIGNOLIS (Pine Nuts) - necessary to make authentic pesto sauce they are also great on salads after being toasted. MASCARPONE CHEESE - a versatile ingredient somewhat similar to our cream cheese but sweeter, smoother and creamier. I use it to make desserts (a must have for tira misu) and add it to sauces to make them rich and creamy (and it's healthier than adding butter and heavy cream).
